Sticky Butterscotch Toffee Coffee Cake

WHAT YOU NEED

For the Cakes:

1 ¾ cups all-purpose flour

1 cup granulated sugar

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

½ cup Don Francisco Butterscotch Toffee Coffee (brewed and cooled)

½ cup sour cream

 For the Sticky Butterscotch Toffee Sauce:

½ cup unsalted butter

¾ cup packed brown sugar

¼ cup heavy cream

1 tsp vanilla extract

½ cup toffee bits or crushed toffee bars

A pinch of salt

How to Make

1. Preheat your oven to 350°F . Grease a standard 12-cup muffin tin.

 2. Make the Sticky Butterscotch Toffee Sauce:In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, heavy cream, and salt. Bring to a simmer and cook for 3-4 minutes until the mixture thickens slightly. Remove from heat, stir in the vanilla extract, and set aside.

 3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, cream the softened butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract. Mix in the cooled Don Francisco Butterscotch Toffee Coffee and sour cream until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix.

 4. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

 5. Once the cakes have cooled slightly, pour the warm butterscotch toffee sauce over each one, letting it drizzle down the sides. Sprinkle with extra toffee bits if desired.
