Pumpkin Spice COFFEE Scones

WHAT YOU NEED
For the Scones:
2 cups all-purpose flour
¼ cup granulated sugar
1 tbsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
¼ tsp ground cloves
¼ tsp salt
½ cup unsalted butter, cold and cubed
½ cup pumpkin puree
¼ cup Don Francisco Pumpkin Spice Coffee (brewed and cooled)
2 tbsp heavy cream
1 tsp vanilla extract
1 large egg
Star Anise for topping
For the Pumpkin Spice Coffee Glaze:
1 cup powdered sugar
2-3 tbsp
¼ tsp ground cinnamon (optional, for extra spice)
How to Make
1. Preheat your oven to 400°F. Line baking sheet with parchment paper.
2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Add cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut butter into the flour until the mixture resembles coarse crumbs. In a separate bowl, whisk together the pumpkin puree, cooled coffee, heavy cream, vanilla extract, and egg until well combined. Pour wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the dough.
3. Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick.
4. Using a sharp knife or a bench scraper, cut the dough into 8 equal wedges. Place the scones onto the prepared baking sheet, spacing them out slightly.
5. Bake in the preheated oven for 15-18 minutes, or until scones are golden brown on the edges and cooked through. Remove from the oven and let scones cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
6. Make the Pumpkin Spice Coffee Glaze: In a small bowl, whisk together powdered sugar and 2-3 tablespoons of brewed and cooled Don Francisco Pumpkin Spice Coffee. Add ground cinnamon if you want extra spice. Adjust the consistency of the glaze by adding more powdered sugar for thickness or more coffee for a thinner glaze.
7. Once scones have cooled, drizzle the pumpkin spice coffee glaze over the top of each scone using a spoon or fork. Allow glaze to set for a few minutes before serving. Top with star anise. Enjoy these scones with a fresh cup of Don Francisco Pumpkin Spice Coffee!
